Ring of Fire ® Chicken Fried Rice

 2 cups leftover cooked White Rice, refrigerated
 1 cooked Chicken Breast, diced (approx. 4 oz.)
 2 slices of Bacon, diced
 1/2 cup diced Onion
 1/2 cup shredded Carrots
 1/4 cup Snow Peas
 1 Egg
 2 tbs. Ring of Fire® Original Hot Sauce (or more if you want it spicier)
 1 tbs. Tamari or Soy Sauce
 1/4 tsp Toasted Sesame Oil
 Garnishes - Green Onions, Toasted Sesame Seed

In a medium sauté pan, cook bacon until crispy. Remove bacon, drain on a paper towel and set aside. In the rendered bacon fat over medium to medium high heat, sauté onions and carrots for about 1 minute. Then, add the snow peas and the chicken to the pan and sauté for an additional 1 minute. Crumble the rice into the pan and cook until rice is heated through. In a small bowl, whisk the egg and then pour over the rice, chicken and vegetables. Quickly, fold the egg into the rice mixture until it is cooked. Then add in the bacon. Turn off the heat and drizzle over the rice, Ring of Fire® Original Habanero Hot Sauce, Tamari and the toasted sesame oil and mix until sauce is evenly distributed. Garnish with diced green onion and toasted sesame seeds. Makes 2 servings

Helpful Hints:

Rice MUST be cold or your fried rice will turn out gummy. If cold rice is in clumps (like Short Grain Sticky Rice), wet your fingers and break up the clumps into the sauté pan. I like to use leftover rice from the day before.

Variations:

This recipe is basically using the leftovers in the fridge and making a meal. If you have a little bit of veggies, an egg and some leftover meats, you can make fried rice. With fried rice, you can substitute any of the ingredients listed above.

- If you don't want to use bacon, sauté with grapeseed oil (or any flavorless oil like canola) and
add a touch of toasted sesame oil to sauté your vegetables.

- If you have some leftover pork, or shrimp or beef or tofu, you can use that instead of the
chicken. Or, you don't have to use any meats in your fried rice.

-If you don't have carrots or snow peas, but you have red bell pepper and broccoli, you can use
that. If you do substitute broccoli, steam it for about 1-2 minutes in the microwave before
adding to the rice.

-You can use brown rice instead of white rice. The brown rice MUST be cold.

- If you don't have rice, but you have pasta, you can substitute pasta for the rice but omit the
egg.

- You can omit the egg and rice and just have a stir fry of veggies and meats.
